Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and parsley
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper
Pour the dressing over the quinoa mixture and toss to combine
