On cold days, this vegan tomato basil soup is the perfect way to warm up and fill up. Rich tomatoes, creamy coconut milk, and fragrant basil come together to make a healthy soup that will warm you up from the inside out.
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can 28 oz crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup coconut milk
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic
Cook until onion is translucent, about 5 minutes
Stir in crushed tomatoes and vegetable broth
Bring to a simmer
Let the soup simmer for 15-20 minutes
Using an immersion blender, blend the soup until smooth
Stir in coconut milk and chopped basil
Season with salt and pepper to taste
Simmer for an additional 5 minutes
Serve hot, garnished with fresh basil leaves if desired
